Cooking with Pasture Raised Duck | NIKU Farms

We know not everyone is well-versed in cooking duck on a regular basis, so we’re here to give you some tips on what to do with each of Marita Fields’ cuts of duck meat!

Duck Breasts

Glaze your duck breast with sweet and/or savoury flavours such as an orange and ginger sauce, or maple syrup and cook until you reach an internal temperature of 170F, or aim a little lower if you want to hit a succulent medium rare. 

Duck Legs

Not sure what to do with your duck legs? Try roasting them in the oven with rosemary and a red wine sauce at 375F. Cook until hitting an internal temperature of 165F, and you’ll have a delicious, well-done duck leg.

Duck Wings

Duck wings are going to be fattier than chicken wings. You could try a buffalo sauce, but duck goes really well with complimentary flavours. Add a sweet element to your spicy sauce such as marmalade, and you’ll have a new favourite type of wing!

Whole Duck

Finally, you can of course roast a duck whole! Roasted, grilled, or slow-cooked – served with roasted vegetables, a sweet and savoury glaze, or mashed potatoes and salad; a crispy whole duck is great for special occasions!
